  • 300milliliter thickened cream, whipped
  • 2 large ripe mangoes (plus extra to garnish)
  • 2 limes, juiced, rind finely grated
  • 2teaspoons powdered gelatine
  • 12 sponge finger biscuits (to serve)
  • 1/2 cup caster sugar

Method

Step 1 of 4

Add gelatine to 1/4 cup boiling water and whisk with a fork until dissolved. Set aside to cool.

Step 2 of 4

Cut cheeks from either side of the mango stones and scoop flesh from skin with a large spoon. Roughly chop and place into a food processor. Add sugar and lime rind and juice. Process until smooth.

Step 3 of 4

With blender running, add cooled gelatine and process for 30 seconds. Gently fold in cream and spoon into glasses or bowls. Chill until set.

Step 4 of 4

You may like to top with some extra mango and serve with sponge fingers.
