Method
Step 1 of 2
Place pure cream and vanilla bean paste in a bowl and beat, using an electric mixer, until soft peaks form. Add double cream and gently whisk until combined and soft peaks form (do not overwhisk).
Step 2 of 2
Layer meringues, cream mixture and peaches onto a serving plate. Drizzle with passionfruit pulp and garnish with mint.
