- 1/2 cup fresh passion fruit pulp

- 1 1/2 cup plain flour
- 1 1/2 cup almond meal
- 190grams unsalted butter, chilled, cubed
- 1/2 cup icing sugar
- 1/2teaspoons salt

Method
Step 1 of 6
Pastry
Process flour, almond meal, butter, icing sugar and salt in food processor or rub together with fingertips until it resembles breadcrumbs. Add yolks and Concentrated Vanilla Extract, process/mix until pastry comes together. Form into a ball, wrap in cling wrap and chill for 30 mins.

Preheat oven to 190°C (fan forced). Grease a 24cm fluted tart tin with butter.

Roll pastry out to 5mm thick, place into tart tin, patching any tears. Placing a piece of baking paper inside the tart, then fill with rice, dried beans, or baking weights. Bake for 10 mins.

Remove paper and weights, then bake for another 5 mins. Set aside to cool.

Filling
Reduce oven to 150°C (fan forced). Whisk together eggs, yolks and sugar. Add cream, Vanilla Essence, lemon juice and passion fruit pulp, whisk to combine. Pour into tart case and bake for 50 mins or until custard is set. Allow to cool, then chill for 6 hours.

Meringue
Just before serving, prepare Meringue & Pavlova Powder Mix as per pack directions. Top pie with meringue, then brown with a blow torch or under a hot grill. Finish with a drizzle of passion fruit.
