Choc-Cherry Tarts

- 250 plain chocolate biscuits
- 2tablespoons brandy
- 1/4 cup icing sugar
- 125grams butter, melted
- 1.25kilograms cherries, pitted (if not in season can substitute canned cherries)
- 150grams white chocolate
- 1/2 cup cream, whipped
- 300grams mascarpone, at room temperature

Step 1 of 6
Lightly grease 8x10cm fluted, loosebased flan tins. Grease with butter.
Step 2 of 6
Process biscuits in a food processor until they resemble fine breadcrumbs. Add butter and process to combine. Divide mixture between tins and press firmly over bases and sides. Refrigerate for 30 minutes until firm.

Meanwhile, pit cherries and transfer to a bowl. Add brandy, 1 tbs of the icing sugar and stir to combine. Set aside.

Melt chocolate in a heatproof bowl over a saucepan of simmering water. Beat mascarpone and remaining icing sugar in a separate bowl until smooth.

Carefully transfer biscuit cases to serving plates.
Step 6 of 6
Fold chocolate, mascarpone and cream together. Spoon into cases. Top with cherries and drizzle with a little of the syrup. Serve. Note: When melting chocolate make sure you keep stirring it over simmering water and don't let it burn.
