Chocolate Puddings With Sherry Raisins

- 250grams raisins
- 3/4 cup self-raising flour
- 1/2teaspoons mixed spice
- 180grams butter, diced
- 2tablespoons cocoa
- thick vanilla custard (and dolloping cream, for serving)
- 2 eggs, lightly whisked
- 1 cup brown sugar
- 1/2 cup almond meal
- 1/4 cup sherry
Method
Step 1 of 7
Preheat oven to 160°C (140°C fan-forced).
Step 2 of 7
Lightly grease 6 x 3/4 cup capacity muffin pans.
Step 3 of 7
Place butter, sugar, raisins and sherry in a saucepan and heat, stirring occasionally until butter has melted. Allow to cool.
Step 4 of 7
Mix eggs through raisin mixture and then fold in the flour, almond meal, cocoa and spice.
Step 5 of 7
Pour between prepared pans and bake for 30 minutes.
Step 6 of 7
Allow to cool for 10 minutes in pan before removing.
Step 7 of 7
Use a small spatula to help remove puddings from pans and serve with custard and cream.
