- 375grams sago
- 1/2 cup coconut cream
- 1/3 cup caster sugar
- 425grams mango slices in syrup
- 250grams fresh mango, sliced (to garnish)

Method
Step 1 of 6
Drain mango in syrup and reserve 1 cup of the liquid. purée mango flesh and set aside. Rinse anchor sago under running water. Drain.
Step 2 of 6
Combine reserved mango liquid in a saucepan with sago, water and sugar. Bring to the boil over medium-high heat.
Step 3 of 6
Reduce heat to low and simmer, stirring frequently, for about 20 minutes or until sago is translucent.
Step 4 of 6
Add coconut and simmer gently for a further 6 minutes, until mixture is thick and sago is no longer white. Stir in mango purée.
Step 5 of 6
Spoon into 6 small ramekins. Cover and chill until firm.
Step 6 of 6
Serve with extra sliced mango.
