  • 1/2 cup tapioca
  • 270milliliter low fat coconut milk
  • 1 cup low fat milk (standard milk can be used instead of low fat)
  • 1/3 cup palm sugar (or brown sugar)
  • 1 pinch pink salt ground (to taste)
  • 1 mango, finely chopped
  • 1/4 cup passionfruit pulp
  • 1 kiwifruit, thinly sliced

Method

Step 1 of 2

Place tapioca, milks and a pinch of salt into a medium saucepan. Bring to the boil over medium heat, stirring frequently. Reduce heat and simmer uncovered, for about 15 minutes or until tapioca is translucent. Remove from heat.

Step 2 of 2

Divide between serving bowls and sprinkle with sugar. Serve warm or at room temperature with fruit.
