  • 1/2 small lemon, juiced
  • 4 slices wholemeal bread, toasted
  • 1 mango, peeled, cut into small cubes
  • extra virgin olive oil (to serve)

Description

This mango and avocado toast sprinkled with homemade dukkah hits the trifecta of being breakfast, brunch and snack worthy. Make it in just 15 minutes and enjoy!

Method

Step 1 of 3

Place nuts, fennel seeds and cumin seeds in a small food processor and process until a coarse crumb forms. Heat a small frying pan over low heat. Add sesame seeds and nut mixture and toast, stirring, for 3 minutes or until fragrant. Transfer to a small bowl. Stir in salt and pepper.

Step 2 of 3

Place avocado and lemon juice in a small bowl and mash coarsely with a fork.

Step 3 of 3

Spread each piece of toast with avocado mixture. Top with mango and sprinkle with dukkah. Serve drizzled with a little oil.
