Mince Fruit Filling
  • 180grams Macro Raisins
  • 125grams Macro sultanas
  • 50grams Macro whole almonds, chopped
  • 3 granny smith apple, diced
  • 125grams suet
  • 120grams Angas Park fruit mix medley
  • 125grams brown sugar
  • 1 orange zested and juiced
  • 1 lemon, 10 ml zested
  • 60milliliter Napoleon 1875 Brandy
  • 2teaspoons Masterfoods mixed spice
  • 2teaspoons cinnamon
Pastry
  • 375grams Macro Organic Flour Plain
  • 330grams butter, diced
  • 187grams sour cream
  • 1 lemon, zested
  • 1teaspoons Queen Natural Vanilla Concentrated Extract

Description

This mince pie recipe is easy to make and packed full of juicy fruit, aromatic spices all encased in a light shortcrust pastry. The perfect treat to share with family and friends over the festive season.

Method

Step 1 of 11

Preheat oven to 140°C. Lightly grease and line a baking tray with baking paper.

Step 2 of 11

In large bowl, combine diced apples, suet, raisins, sultanas, candied peel, brown sugar, orange zest and juice, lemon zest, almonds, brandy, mixed spice and cinnamon.

Spread on lined baking tray and bake for 30 mins.

Step 4 of 11

Place cooked mixture back into bowl, add more brandy or sherry to taste. Fold through with a wooden spoon. Cover with cling wrap. Refrigerate overnight.

In food processor, add flour and butter. Pulse until mixture resembles fine breadcrumbs.

Add sour cream, lemon zest, vanilla and 90ml ice-cold water and pulse until the dough starts to combine.

On lightly floured surface gently form pastry into a ball. Wrap in cling wrap. Refrigerate for 20 mins.

Preheat oven to 180°C. Heavily grease a 12-hole muffin tray.

Step 9 of 11

On lightly floured surface, roll pastry to 2cm thick. Cut into rounds and carefully press into muffin tray.

Spoon in the filling, pressing down to fill. Top with a small piece of rolled pastry in the shape of your choice.

Bake for 20-25 mins or until golden brown and pastry is cooked.
