- 8 free range eggs
- 2 tub low-fat hummus
- 800grams lentil salad
- 1/2 cup mixed marinated olives, sliced
- 200grams Mix-a-Mato® tomatoes, sliced
Description
This quick and easy hummus bowl is loaded with lentils, olives, egg and tomato, making it an easy dinner choice when you're time poor.
Instruction tip
Cooking tip:Bring eggs to room temperature before boiling to reduce cracking.
Method
Step 1 of 4
Place eggs in a large saucepan of water over medium-high heat. Bring to the boil, swirling with a spoon to help centre the yolks.
Step 2 of 4
Boil eggs for 8 minutes. Drain. Rinse under cold water. Peel. Cut in half.
Step 3 of 4
Spoon hummus into serving bowls. Add lentil salad, olives and tomatoes.
Step 4 of 4
Add eggs to bowls. Season with pepper. Serve.
