- 4 heads little gem lettuce
- 1teaspoons lemon juice
- 50grams mayonnaise (reduced fat)
- 50grams Greek yoghurt
- 25grams ketchup (reduced sugar)
- 20milliliter tabasco (to taste)
- 400grams king prawns, cooked, peeled, deveined
- 1 avocado, chopped
Description
These delicious prawn cocktail lettuce cups make a great light lunch or snack.
Method
Step 1 of 3
Divide the lettuce leaves into 24 "boats" and arrange on a platter.
Step 2 of 3
Mix the lemon juice, mayonnaise, yoghurt, ketchup and a couple of dashes of tabasco in a large bowl. Tip in the prawns and avocado and mix to coat.
Step 3 of 3
Spoon prawn mix on to each of the lettuce boats and serve.
