- 1 cup white sugar
- 1/4 cup lime juice
- 1 lemon, zested
- 1/2 cup lemon juice

Method
Step 1 of 4
Combine 2 cups of water and sugar in a small saucepan over medium-high heat and stir for 5 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to medium and simmer, without stirring, for 5 minutes or until syrup thickens. Cover and set aside for 1 hour to cool.
Step 2 of 4
Add lemon and lime juice to syrup, stir to combine and transfer mixture to an airtight container. Place in the freezer for 2 hours or until frozen around the edges.
Step 3 of 4
Using a fork, roughly break up frozen mixture. Return to the freezer in airtight container for 1 hour. Repeat the process a further 2 times.
Step 4 of 4
To serve, use a fork to scrape the mixture into coarse crystals. Divide among 6 small glasses. Garnish with citrus zest.
