  • 1 red onion, finely chopped
  • 6 ripe tomatoes, finely chopped
  • 1 cucumber, finely chopped
  • 1 fresh red chilli, deseeded and finely chopped
  • 1 handful coriander, finely chopped
  • 1 handful mint, finely chopped
  • 400grams basmati rice, cooked and cooled
  • 2 limes, juice only
  • 2tablespoons roasted peanuts, roughly chopped
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Put the onion, tomatoes, cucumber, chilli, coriander, mint and rice in a bowl, and pour over the lime juice.

Step 2 of 3

Season well, cover and allow to stand at room temperature for 5-6 minutes.

Step 3 of 3

Before serving, stir to mix well and sprinkle over the chopped nuts.
