- 400grams can chickpeas, drained
- 100grams cooked bulgar wheat
- 200grams roasted red capsicums(from a jar), drained and chopped
- 1 large handful dill, chopped
- 1 large handful coriander, chopped
- 6tablespoons olive oil
- 1 orange, juice only
- 1teaspoons ground cumin
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 2
Place the chickpeas in a bowl with the bulgar wheat and capsicums. Add the dill and coriander.
Step 2 of 2
Whisk together the olive oil, orange juice and cumin and season well. Pour the dressing over the salad, toss to mix well and serve immediately.
