- 2 medium tomato, chut into large chunks
- 1 medium red onion, peeled and cut into chunks
- 60grams red cabbage, thickly sliced

- 10grams coriander, chopped
- 1teaspoons cumin
- 1tablespoons ginger, chopped

This plant based skewer kebab is full of fresh, colourful ingredients, makes for a lighter dinner option
Method
Step 1 of 2
Pan-fry the 'chicken' on a medium heat with some olive oil for 10 minutes while turning throughout. Add the ginger, coriander and cumin to the pan and fry for a further 2 minutes.
Step 2 of 2
Remove from the heat and allow to cool enough so you can touch. Keep the oil and sauces in the pan. Open the pitas and fill with all your prepared ingredients.
