- 1/2 punnet snow pea sprouts (trimmed)
- 1 Lebanese cucumber (thinly sliced)
- 300grams slices roasted red pepper
- 1 Turkish loaf
- 1/3 cup vegan mayonnaise
- 1tablespoons olive oil
- 500grams chickpea veggie burgers
- 200grams beetroot hummus

Method
Step 1 of 3
Heat a large frying pan over medium heat. Cut Turkish loaf into quarters and split each portion through the centre. Place cut-sides down in pan and lightly toast for 1 minute. Remove from pan.
Step 2 of 3
Heat oil in same pan over medium heat. Cook veggie burger patties for 3-4 minutes on each side or until golden brown and heated through. Remove from pan and slice in half to fit bread, if necessary.
Step 3 of 3
Spread bread bases with hummus, top with pepper, burger patties, sprouts and cucumber. Drizzle over mayonnaise and season. Top with bread lids to serve.
