Step 1 of 2
Heat up a non-stick pan to a medium heat and fry the mushrooms, tarragon and shallots with the canola oil for 3 minutes while tossing.

Remove the mushrooms and shallots from the heat and serve on sourdough bread with salt and pepper to taste.
