- 1 whole garlic bulb
- 3tablespoons olive oil
- 1 large onion, peeled and diced
- 1teaspoons cumin
- 400grams chickpeas, drained
- 1 1/4 cup vegetable stock, hot, made with 1 stock cube
Description
Garlic chickpea mash is a delicious replacement for potatoes and works really well with middle eastern dishes.
Method
Step 1 of 3
Pre-heat the oven to 160°C/140°C fan-forced. Slice off the top of the garlic bulb, place in a sheet of tinfoil, drizzle with oil and wrap up. Roast for 30 minutes.
Step 2 of 3
Heat the rest of the oil in a pan and cook the onion and cumin for 5 minutes. Add the chickpeas and stock and simmer for 10 minutes. Drain and reserve some of the stock.
Step 3 of 3
Squeeze the roasted garlic into the pan. Mash with a potato masher, adding more stock if necessary.
