  • 1 whole garlic bulb
  • 3tablespoons olive oil
  • 1 onion, peeled and diced
  • 1 1/2 cups chickpeas
  • 1 1/4 cup vegetable stock, hot, made with 1 stock cube
  • 400grams butter beans, drained
  • 1 bunch parsley, fresh

Description

This vibrant green butter bean mash is a tasty alternative to mashed potatoes.

Method

Step 1 of 3

Pre-heat the oven to 160°C/140°C fan-forced. Slice off the top of the garlic bulb, place in a sheet of tinfoil, drizzle with oil and wrap up. Roast for 30 minutes.

Step 2 of 3

Heat the rest of the oil in a pan and cook the onion for 5 minutes. Add the chickpeas and stock and simmer for 10 minutes. Drain and reserve some of the stock.

Step 3 of 3

Squeeze the roasted garlic into the pan and add the parsley. Blitz to a thick puree consistency with an immersion blender, adding more stock if necessary.
