  • 200grams hummus

Description

This simple falafel bowl with quick cauliflower rice is a perfect veggie packed lunch or light dinner.

Method

Step 1 of 2

Heat the falafels according to pack instructions. Blitz the cauliflower to a rice consistency in a food processor, tip into a bowl, add a dash of water, half of the coriander, lemon zest and half of the lemon juice and cover with cling film. Microwave for 2 minutes until tender.

Step 2 of 2

Arrange the carrots, cucumber, cauliflower rice, spinach and hummus in separate sections in a bowl. Top the hummus with falafel, scatter with pomegranate seeds, coriander and lemon juice and serve.
