Description
Have this mouth-watering enchilada sauce on hand for a speedy Mexican dish.
Method
Step 1 of 2
In a skillet over low heat, add the vegetable oil. Tip in the chilli powder, flour, cumin and garlic powder. Mix constantly until it deepens in colour and becomes fragrant for about 1 minute. Whisk in the tomato paste and the vegetable stock slowly.
Step 2 of 2
Simmer while occasionally until thick, for about 10 minutes. Remove from heat then whisk in the vinegar. You may adjust the seasoning with salt and pepper, if desired.
