  • 1 carrot, peeled, finely grated
  • 1/2 cup orange juice
  • 1 beet, peeled, finely grated
  • 12 strawberries, stems removed, sliced

Description

There are times vegetables need to be hidden in order to get those picky eaters a healthy and well balanced snack. These colourful rainbow popsicles do just that while cooling you down at the same time.

Method

Step 1 of 3

Blend the kiwi and spinach together using either a hand blender or stand up blender until smooth. Divide the kiwi and spinach juice to 12 popsicles moulds. Add to the freezer to firm up for 30 minutes.

Step 2 of 3

Next blend the carrot and orange juice together, divide into each popsicle mould placing it back into the freezer for another 30 minutes.

Step 3 of 3

Blend and add the final layer of beet and strawberries to the popsicle moulds inserting the popsicle sticks into the centre. Place into the freezer for 3-4 hours until completely frozen.
