  • 3 cup cherries, pitted, stems removed
  • 3tablespoons honey
  • 1tablespoons lemon juice

Method

Step 1 of 6

Preheat oven to 70ºC and line a baking tray with non-stick baking paper.

Step 2 of 6

Place cherries, honey and lemon juice in a blender and blend until smooth.

Step 3 of 6

Place cherry mixture in a small saucepan over medium heat and cook for 15 minutes or until reduced to a jam-like consistency.

Step 4 of 6

Using the back of a spatula, spread mixture evenly over the tray, into a 3mm-thick rectangle.

Step 5 of 6

Bake for 3 hours or until fruit leather is no longer tacky to the touch.

Step 6 of 6

Set aside to cool completely. Using kitchen scissors, cut fruit leather and baking paper lengthways into 4cm-wide strips. Roll up the fruit leather strips with the baking paper still attached and serve.
