- 1teaspoons cornflour
- 600milliliter thickened cream
- 2teaspoons vanilla extract
- 1/2 cup blueberries
- 1tablespoons lemon juice
- 150grams frozen raspberries
- 175grams cream cheese, softened
- 1/4 cup caster sugar
- 395grams sweetened condensed milk

Method
Step 1 of 2
Stir berries and sugar in a pan over medium heat until berries release juices. Stir combined lemon juice and cornflour into berry mixture and bring to the boil. Stir for 2 minutes until thick. Chill.
Step 2 of 2
Meanwhile, beat cheese, milk and vanilla in a bowl until creamy. Gradually add thickened cream and beat until thick. Spoon into popsicle moulds, alternating with dollops of berry mixture. Freeze for 1-2 hours until firm but not frozen. Insert a popsicle stick into each mould. Cover and freeze for 6 hours.
