Method

Step 1 of 2

Scrolls: Preheat oven to 210°C. Combine 1/3 cup chopped herbs (parsley, dill, chives, oregano, thyme), crushed garlic and 2 tbs olive oil. Season with salt and pepper. Lay 2 sheets partially thawed puff pastry onto bench. Spread each with herb mixture, sprinkle with grated parmesan and roll up. Cut into 2cm thick slices and place onto baking paper-lined trays. Bake for 15-20 minutes or until puffed, golden and crisp. Cool and serve. Store cold pastries in an airtight container for up to 3 days. Makes 24.

Step 2 of 2

Twists: Cut 2 puff pastry sheets into 3cm wide strips. Brush with herb mixture and top with parmesan. Fold each strip in half to make narrow strips and twist before placing onto baking-paper lined trays. Bake for 15-20 minutes or until puffed, golden and crisp. Store cold pastries in an airtight container for up to 3 days. Makes 16.
