  • 250grams icing sugar
  • 1 egg whites
  • 1/4teaspoons peppermint extract
  • 200grams dark chocolate, chopped finely

Description

These classic peppermint creams make an impressive homemade gift and are simple to make.

Method

Step 1 of 4

Sieve the icing sugar into a large bowl and add a little bit of the egg white and a few drops of the peppermint extract. Beat well to incorporate. Add more egg white gradually as you beat until you have a smooth, soft and pliable dough.

Step 2 of 4

Using your hands, roll the mixture into 20 small balls, place on a lined baking sheet and flatten with the bottom of a glass.

Step 3 of 4

Place the chopped chocolate in a large bowl and microwave in 30 second intervals until fully melted when stirred. Let the chocolate stand for 5 minutes.

Step 4 of 4

Dip each peppermint disc in chocolate and place back on the baking tray. Set in the fridge for 2 hours.
