- 1 red onion, cut into thin wedges
- 1 red capsicum, halved, deseeded, thinly sliced
- 200grams poached chicken, shredded
- 320grams punnet mix-a-mato tomatoes, roughly chopped
- 1 1/2 cups Woolworths shredded light tasty cheese
- 120grams mixed salad leaves and healthier garlic bread (to serve)
