- 1 clove garlic, crushed
- 1 bunch basil, leaves removed
- 1/2 cup extra virgin olive oil
- 200grams haloumi, sliced
- 8 truss tomatoes

Method
Step 1 of 3
Place 1 cup basil leaves in a bowl and cover with boiling water. Sit for 30 seconds, then strain and plunge into iced water to refresh. Drain well, patting with paper towel to remove excess water. Place in a small food processor with oil and garlic. Process quickly until just blended and bright green.
Step 2 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. With tomatoes lying on their sides, make 4 or 5 cuts in each, without cutting all the way through. Transfer to tray. Drizzle a little basil oil into tomatoes. Season with salt and pepper. Place halloumi in each cut.
Step 3 of 3
Bake for 20 minutes or until tomatoes have softened and are cooked through. Serve drizzled with basil oil.
