  • 1/2 medium butternut pumpkin
  • 2tablespoons maple syrup
  • 1tablespoons extra-virgin olive oil
  • 2teaspoons dijon mustard
  • 2teaspoons fresh sage leaves, finely chopped
  • 1/2teaspoons fresh thyme, finely chopped
  • 1/2teaspoons salt
  • 1/4teaspoons black pepper, ground
  • 2tablespoons walnuts, chopped
  • 2 bbq skewers
  • 1/2teaspoons sage and thyme (extra for garnish)

Description

Pumpkin is one of my favourite vegetables & when combined with delicious flavours & baked hasselback style is a knock out dish for any festive or special event.

Method

Step 1 of 8

Preheat oven to 180c.

Step 2 of 8

Remove the skin, seeds & pulp from pumpkin.

Step 3 of 8

Place cut side down onto baking tray that has been lined with baking paper and bake for 20 minutes. Remove from oven and let slightly cool.

Step 4 of 8

While pumpkin is in the oven combine the maple syrup, olive oil, dijon mustard, chopped herbs, salt and pepper in a small bowl and mix well until combined.

Step 5 of 8

When slightly cooled cut slices in the pumpkin using the skewers as a guide so you don't cut the whole way through.

Step 6 of 8

Remove skewers and brush 1/2 of the maple syrup dressing over the pumpkin and into the slits and return to oven for 10 minutes.

Step 7 of 8

Continue basting pumpkin till it is almost cooked then add walnuts to syrup dressing and mix well.

Step 8 of 8

Spoon dressing mixed with walnuts over the top of pumpkin and return to the oven for a few minutes until golden. Do not leave too long or you will burn the walnuts. Serve with fresh herbs and a pinch of salt.
