  • 2tablespoons apple cider vinegar
  • 150grams raw cashews
  • 3/4 cup macadamia oil (see note)

Method

Step 1 of 3

Soak cashews in 1/2 cup hot water for 15 minutes until softened.

Step 2 of 3

Drain, reserving water, and add to a food processor. Blend until smooth. Add mustard and vinegar. With the motor running, slowly pour in oil until the mixture becomes creamy and thick. Season with salt to taste.

Step 3 of 3

If a thinner consistency is required, add some of the soaking water.
