- 1 mango, flesh cut into 1cm pieces
- 1/2 red onion, finely chopped
- 1/4 bunch bunch coriander, leaves picked
- 1 lime, rind finely grated, juiced
- 1 1/2tablespoons Woolworths extra virgin olive oil
- 500grams green prawns, peeled, deveined, tails in tact if desired
- 2teaspoons Woolworths Cajun seasoning
- 8 mini tortillas
- 1 avocado, thinly sliced
Description
It’s always taco time, so do your guests a favour and fill their plates with these easy-to-make grilled prawn and mango tacos. The tantalising blend of seafood and sweet fruit will bring a tropical fiesta feel to the Christmas meal.
Method
Step 1 of 4
Combine mango, onion, coriander, rind, half of the juice and 1 tbs oil in a small bowl. Season.
Step 2 of 4
Heat a barbecue chargrill or chargrill pan over medium-high heat. Toss prawns with seasoning and remaining oil. Cook prawns for 2 minutes each side or until charred and cooked through. Transfer to a plate.
Step 3 of 4
Add tortillas to chargrill. Cook for 30 seconds each side to warm through.
Step 4 of 4
Toss avocado with remaining lime juice. Fill tortillas with prawns, avocado and salsa. Serve.
