For the granola
  • 2tablespoons maple syrup
  • 1/2teaspoons vanilla extract
  • 1/4teaspoons ground cinnamon
  • 1/4teaspoons sea salt
  • 100grams rolled oats
  • 50grams uncooked amaranth
  • 50grams hulled millet
  • 75grams almonds, chopped
  • 40grams pumpkin seeds
  • 1tablespoons virgin coconut oil
  • 4 peaches, pitted and halved
  • 2tablespoons grapeseed oil
  • 4 scoops vanilla ice cream

Description

Grilled peaches are one of summer’s tastiest treats. Paired here with a healthy amaranth and millet granola, they are easy to prepare and can also be stored overnight for a filling wholegrain breakfast.

Method

Step 1 of 2

Preheat the oven to 180°C . For the granola, place all the ingredients in a large bowl and toss to combine. Spread the mixture evenly in a baking tray and place in the oven. Bake the granola for 10-15 minutes or until the oats and nuts are lightly browned. Remove from the heat and leave to cool.

Step 2 of 2

Meanwhile, set the grill at its medium setting. Brush the peach skins with the oil and place under the grill for 2-3 minutes, on each side, until tender. Remove from the heat. Place the grilled peaches in serving dishes, then top with a scoop of vanilla ice cream and the granola. Serve immediately.
