- 1teaspoons baking powder
- 1 1/3 cup plain flour
- green food colouring (optional)
- 2tablespoons icing sugar, sifted (to serve)
- 125grams unsalted butter, melted, cooled
- 1teaspoons vanilla extract
- 4 matcha green tea bags
- 3 eggs
- 2/3 cup caster sugar
Method
Step 1 of 4
Preheat oven to 150°C. Grease and lightly flour a 12-hole madeleine tin (see tip).
Step 2 of 4
Place tea bags into a cup and add 2/3 cup warm water. Set aside for 5 minutes. Remove tea bags and squeeze to extract tea.

Meanwhile, beat eggs, sugar and vanilla together with electric beaters until pale and thick. Sift flour and baking powder together. Stir into egg mixture. Add butter and cooled tea and stir well to combine. Add a few drops of food colour, if desired.

Spoon into holes of madeleine tray to 3/4 full. Bake for 12-15 minutes or until pale golden. Turn out onto a wire rack to cool. Re-grease and flour tin for each batch. Dust with icing sugar, to serve.
