- 2 tomatoes (diced)
- 2 Lebanese cucumber (diced)
- 1/2 bunch mint, finely chopped
- 1/2 red onion, thinly diced
- 1/2 bunch continental parsley, finely chopped
- 1/4 cup extra virgin olive oil
- 2tablespoons extra virgin olive oil
- 1/2 lemon, zested (juiced)
- 200grams gluten-free Macro falafel mix
- 1/2 cup gluten-free Red Kellys sweet chilli lime dressing
- 120grams salad leaves (to serve)
- 1packets Woolworths Free From Gluten corn tortillas
Method
Step 1 of 3
Make gluten-free falafel according to packet instructions. Heat oil in a large frying pan over medium heat. Cook falafels, turning regularly, for 8 minutes or until dark golden on all sides. Transfer to a plate lined with paper towels to drain.

To make the tabouli, combine all ingredients in a bowl and season.
Step 3 of 3
Serve falafels with diced tomato, sliced red onion, tabouli, gluten-free dressing, salad leaves and gluten-free wraps.
