- 1 cup frozen mixed carrot, peas and corn
- 4 spring onions, thinly sliced
- 450grams microwave white long-grain rice
- 1/4 cup salt-reduced soy sauce
- 4 free range eggs

After a quick dinner that's big on flavour? Follow this easy fried rice recipe with our one-tray hack. It's a flavour-packed meal ready in just 20 minutes.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Drizzle oil over a 26 x 30cm (3cm deep) baking tray. Place lup chong, frozen vegetables and half the onion in tray. Stir to combine. Bake for 5 minutes or until vegetables have softened.
Step 2 of 4
Add rice and soy sauce to tray, stirring to combine.
Step 3 of 4
Using back of a spoon, make 4 indentations in rice mixture.
Step 4 of 4
Crack an egg into each indentation, then bake for a further 10 minutes or until egg is cooked. Scatter over remaining onion. Serve.
