  • 2tablespoons extra virgin olive oil
  • 400grams Woolworths pork & veal meatballs
  • 35grams Woolworths taco seasoning mix
  • 1 red capsicum, halved, deseeded, coarsely chopped
  • 1 yellow capsicum, halved, deseeded, coarsely chopped
  • 1 red onion, cut into thin wedges
  • 2 small tomatoes, cut into thick wedges
  • 420grams can Woolworths Mexican-style three bean mix, rinsed, drained
  • 4 Woolworths soft wholegrain wraps
  • 1 avocado, coarsely chopped
  • 1/4 coriander, sprigs picked

Description

Enjoy these spiced meatballs with sweet roasted vegetables, beans, avocado and coriander, alongside soft tortillas for dipping or wrapping.

Method

Step 1 of 3

Preheat oven to 230°C/210°C fan-forced. Heat oil in a large flameproof baking dish over medium-high heat. Add meatballs and spice mix, then cook, stirring occasionally, for 2 minutes or until browned.

Step 2 of 3

Add capsicums, onion, tomato and beans, then stir to combine. Bake for 15 minutes or until meatballs are cooked through and vegetables are tender.

Step 3 of 3

Meanwhile, heat tortillas according to packet instructions. Scatter avocado and coriander over traybake, then serve with tortillas.
