  • 2tablespoons basil
  • 1 large head broccoli
  • 600grams small gold sweet potatoes
  • 1 lemon, zested
  • 1tablespoons Dijon mustard
  • 8 sprigs thyme
  • 1/4 cup macadamia nuts
  • 1/4 cup macadamia oil
  • 600grams skinless chicken thigh fillets
  • 260grams sweet berry truss tomatoes
  • 2 cloves garlic

Method

Step 1 of 2

Preheat oven to 210°C. Line a large roasting tray with baking paper.

Step 2 of 2

In a large bowl, combine 2 tbs oil, zest and lemon juice, thyme and garlic. Add chicken and sweet potato, season and toss to coat. Transfer to tray in a single layer. Spread mustard over chicken and press on nuts. Bake for 30 minutes. Add tomatoes and broccoli and drizzle over remaining oil. Bake for a further 15-20 minutes or until vegetables are tender and chicken is cooked through. Set aside to rest, loosely covered with foil, for 10 minutes. Top with basil and serve.
