  • 1 red onion, halved and finely sliced into 1/2 moons
  • 5-6 fennel stalks, sliced in half horizontally
  • 1 lemon, zested (plus juice)
  • 12 sicilian olives
  • 1 pinch freshly ground pepper
  • 8tablespoons olive oil
  • 8 sprig fresh thyme
  • 6 chicken thighs
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 5

Preheat oven to 180°C.

Step 2 of 5

Add 2 tablespoons of olive oil to a heavy-based frypan and quickly sauté the red onion and chicken thighs on high heat until slightly golden on each side.

Step 3 of 5

Place the chicken and red onion in an ovenproof dish along with the fennel stalks, olives, remaining olive oil, lemon juice, salt, pepper and thyme.

Step 4 of 5

Place in the oven for 20-30 minutes until chicken is well cooked.

Step 5 of 5

Serve with couscous or brown rice.
