- 12 free range eggs
- 1/2 cup whole egg mayonnaise
- 2 lemons, juiced
- 1/2teaspoons curry powder
- 1tablespoons chives, chopped
- 1/4teaspoons cracked black pepper
- 5 celery stalks, finely chopped
- 1 red onion, finely chopped
- 1 bunch dill, sprigs picked
- extra virgin olive oil (to serve)
- mild paprika (to serve)
Description
No summer spread is complete without an egg salad. Make the best creamy egg salad with this easy recipe. It's great as a side or a light lunch.
Method
Step 1 of 3
Boil eggs in a large saucepan of water over medium-high heat for 8 minutes for hard-boiled. Drain eggs. Run cold water over eggs to cool, then peel. Chop eggs in 2cm pieces and place in a large bowl.
Step 2 of 3
Meanwhile, place mayonnaise, lemon juice, curry powder, chives and pepper in a bowl and stir to combine. Season with salt.
Step 3 of 3
Add celery, onion and dill to egg. Spoon a little of the mayonnaise mixture onto plates and spoon on egg mixture. Drizzle with oil, sprinkle with paprika and serve with remaining mayonnaise mixture.
