  • 60grams Danish feta (crumbled)
  • 350grams kaleslaw

Description

Make this easy chicken salad in four simple steps using only four ingredients. This meal is ready in 15 minutes and perfect for a light yet filling dinner.

Method

Step 1 of 4

Place chicken on a chopping board. Using a rolling pin, pound chicken to flatten slightly. Drizzle chicken with 2 tbs extra virgin olive oil and season.

Step 2 of 4

Heat a greased chargrill pan over medium-high heat. Cook chicken for 4 minutes on each side or until cooked. Transfer to a plate. Cover with foil. Rest for 5 minutes.

Step 3 of 4

Place kaleslaw, reserving dressing and seed mix, in a large bowl. Add apple and half the reserved dressing to kaleslaw. Toss to combine.

Step 4 of 4

Slice chicken and arrange on kaleslaw mixture. Top with feta and reserved seed mix. Serve with remaining dressing.
