- 2kilograms Woolworths COOK Italian-style chicken roasting portions with tomato & garlic
- 1/2 loaf day-old sourdough bread, cut into 3cm pieces
- 2tablespoons tbs extra virgin olive oil
- 320grams mix-a-mato tomatoes
- 2tablespoons red wine vinegar
- 175grams mozzarella, thickly sliced
- 1 bunch basil, leaves picked

Description
This easy, cheesy Italian-style roast chicken is the ultimate weeknight dinner recipe. Crispy-skin chicken is served with tomato and garlic for a delicious meal.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced.
Step 2 of 3
Place chicken in a large greased roasting pan (see Tip). Arrange bread around chicken and drizzle chicken and bread with oil. Bake for 20 minutes, turning bread pieces halfway through cooking, or until chicken is almost cooked through.
Step 3 of 3
Add tomatoes to pan, then drizzle over oil from the tomato punnet. Drizzle over vinegar and top with cheese. Bake for a further 15 minutes or until chicken is cooked through. Serve scattered with basil.
