  • 350grams buttermilk pancake shaker
  • 1/2 cup caster sugar
  • 1teaspoons ground cinnamon
  • 50grams butter, melted
  • 1/2 punnet strawberries, roughly chopped (to serve)
  • maple syrup (to serve)

Description

What do you get when you cross a muffin with a doughnut? These share-worthy doughnut muffins! Made using a pancake shaker, it can't get any easier than this.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Grease 2 x 12-hole mini (1 1/2 tablespoon-capacity) muffin pans.

Step 2 of 4

Prepare pancake mix according to shaker instructions. Pour mixture into holes. Bake for 15 minutes or until a skewer inserted into centres comes out clean. Cool in pans for 2 minutes, then transfer to a wire rack to cool completely.

Step 3 of 4

Meanwhile, combine sugar and cinnamon in a shallow bowl.

Step 4 of 4

Brush outside of muffins with butter, then toss in cinnamon sugar. Serve with strawberries and a drizzle of maple syrup.
