- 1 1/2 cup shredded coconut
- 1/3 cup LSA mix
- 1 cup strawberry yoghurt
- 1tablespoons cacao powder
- 300grams fresh dates, pitted
- 2tablespoons white chia seeds
- 1/4 cup coconut flour
- 1 cup pepitas (pumpkin seeds)
- 1/4 cup natural peanut butter

Method
Step 1 of 3
Place dates in the bowl of a food processor and pulse until chopped. If it forms a ball, break into pieces.
Step 2 of 3
Add 1/3 cup yoghurt and all remaining ingredients except coconut. Process until well combined. Transfer mixture to a bowl. Roll tablespoons of the mixture into balls. Place on a tray lined with baking paper.
Step 3 of 3
Place 1/2 cup yoghurt and coconut in 2 small bowls. Dip half of each ball into coconut, then half in yoghurt. Return to tray. Chill for 1 hour to firm. Serve with yoghurt for dipping. Store in an airtight container in fridge for up to 1 week.
