Description
These delicious crispy chickpea wraps are a no hassle vegetarian lunch on the go option.
Method
Step 1 of 2
Pre-heat the oven to 200°C/180°C fan-forced. Toss the chickpeas and oil in a roasting tin, sprinkle over fajita seasoning and mix well to coat. Roast in a single layer for 20-25 minutes until crispy, shaking halfway through.
Step 2 of 2
Heat the wraps according to pack instructions. Toss the avocado, red onion, lime and coriander in a bowl and divide between the wraps. Add crispy chickpeas and yoghurt, wrap up and serve.
