- 180grams bulgur, canned, drained and rinsed
- 1 3/4-plus 4 tsp cup water
- 1 red onion, peeled and sliced
- 1 lemon, zest and juice
- 200grams sundried tomatoes, chopped
- 200grams feta
- 4tablespoons olive oil
- 100grams rocket
- 150grams cherry tomatoes, cut into halves
- 1/2 cucumber, diced
Description
This fresh, tasty and healthy bulghur salad is best served chilled. It can be served at a barbecue or picnic during warmer months.
Method
Step 1 of 2
Tip in the bulgur and water into a small pot. Bring to boil then turn off the flame. Cover the pot for 15 minutes and stir from time to time until the water is completely absorbed. Once cooked, rinse the bulgur with cold running water to stop the cooking process.
Step 2 of 2
In a large bowl, tip in all the ingredients. Mix the salad thoroughly.
