- 2tablespoons vegetable oil
- 1 onion, halved and finely sliced
- 2 cloves garlic, finely sliced
- 1 fresh root ginger, 2.5 cm piece, peeled and finely chopped
- 1tablespoons ground coriander
- 1tablespoons ground cumin
- 1/2teaspoons turmeric
- 3/4 cup coconut milk
- 1/2 cup vegetable stock
- 600grams large cooked peeled prawns, defrosted
- 1 lime, grated rind and juice
- 4tablespoons coriander leaves, finely chopped
- 1teaspoons salt
- 1teaspoons pepper

Method
Step 1 of 3
Heat the oil in a large saucepan, add the onion, garlic and ginger and cook for 4-5 minutes. Add the ground coriander, cumin and turmeric and cook, stirring, for 1 minute.
Step 2 of 3
Pour in the coconut milk and stock and bring to the boil. Reduce the heat and simmer for 2-3 minutes. Stir in the prawns and lime rind and juice, then simmer for 2 minutes or until the prawns are heated through.
Step 3 of 3
Stir in the chopped coriander and season well with salt and pepper. Serve immediately with boiled basmati or jasmine rice.
