  • 1.50kilograms mussels
  • 4 slices crusty bread (to serve)
  • 15grams butter
  • 1 onion, finely chopped
  • 6 cloves garlic, finely chopped
  • 1/3 cup white wine
  • 2/3 cup single cream
  • 1 large handful flat leaf parsley, roughly chopped
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 4

Scrub the mussels in cold water. Scrape off any barnacles and pull away the dark hairy beards. Discard any with damaged shells or open ones that do not close when tapped firmly with a knife.

Step 2 of 4

Melt the butter in a large saucepan and gently fry the onion and garlic for 2-3 minutes until transparent and softened.

Step 3 of 4

Increase the heat and tip the mussels into the pan with the wine. Cover and cook, shaking the pan frequently, for 4-5 minutes until all the shells have opened. Discard any that remain closed.

Step 4 of 4

Pour in the cream and heat through briefly, stirring well. Add the parsley, season well with salt and pepper and serve immediately in large bowls, with crusty bread to mop up the juices.
