- 1tablespoons extra virgin olive oil
- 1/4 punnet thyme, leaves
- 1 brown onion, diced
- 1 clove garlic, crushed
- 1/3 cup plain flour
- 1/2 cup milk
- 2 chicken stock cubes
- 1/3packets Woolworths RSPCA approved chicken thigh fillets bulk pack, fat trimmed, cut into 2cm pieces
- 1/2packets Woolworths frozen winter veg mix
Description
This hearty soup recipe with tender chicken thigh pieces and lots of veggies is just the ticket for a cold night. It requires little effort with just three steps – you’ll be back relaxing in the lounge room before you know it!
Method
Step 1 of 3
Heat oil in a large saucepan over medium heat. Reserve 1/4 tsp thyme. Add onion, garlic and remaining thyme to pan and cook for 4 minutes or until onion has softened. Add flour and cook for 2 minutes, stirring constantly, or until well combined. Add milk and 1L cold water, then crumble in stock cubes. Stir to combine.

Add vegetables and chicken. Increase heat to high and bring to a boil. Reduce heat to medium and simmer for 10 minutes or until chicken is cooked through.
Step 3 of 3
Ladle into bowls. Sprinkle over reserved thyme and serve seasoned with pepper.
