  • 4 brushed potatoes, scrubbed
  • 1tablespoons vegetable oil
  • 1 brown onion, finely chopped
  • 1/3packets Woolworths beef mince
  • 420grams no-added salt chickpeas, rinsed, drained
  • 1 1/2tablespoons Moroccan seasoning
  • 5grams chicken stock cube, crushed
  • 1/4 cup Greek-style yoghurt
  • 1 Lebanese cucumber, diced
  • 1/4 bunch coriander, leaves picked

Description

Take your family on a culinary journey to Morocco with this hearty recipe. Loaded with a seasoned mince and chickpea mixture, these jacket potatoes will hit the spot.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Pierce each potato with a fork 3 times, then wrap separately in foil. Place on a baking tray and bake for 1 hour or until tender when pierced with a small knife.

Step 2 of 3

Heat oil in a medium frying pan over medium-high heat. Add onion and cook for 4 minutes, stirring, or until softened. Add mince and cook for 5 minutes, breaking up with a wooden spoon, or until browned. Add chickpeas, seasoning, stock cube and 1/4 cup cold water, then stir to combine. Simmer for 2 minutes or until mixture has thickened slightly.

Step 3 of 3

Unwrap potatoes and place on plates. Cut a cross into tops of potatoes, ensuring not to cut all the way through. Using a clean tea towel, press around base of each potato to open top. Spoon mince mixture onto potatoes. Serve topped with yoghurt, cucumber and coriander.
