- 1 1/2 cups jasmine rice
- 1tablespoons extra virgin olive oil
- 1 brown onion, sliced
- 1 red chilli, sliced
- 1centimeters ginger, diced
- 1 clove garlic, sliced
- 2tablespoons soy sauce
- 5grams vegetable stock cube, crumbled
- 1 butternut pumpkin, halved lengthways, deseeded, peeled, cut into 5cm pieces
- 1/4 bunch coriander, leaves picked
Description
Meat-free Monday never looked so good! This comforting, flavour-packed vegetarian dish will leave everyone feeling warm and satisfied.
Method
Step 1 of 4
Rinse rice under cold water. Place in a medium saucepan and add 1½ cups cold water. Cover and simmer over low heat for 15 minutes or until rice is cooked. Remove pan from heat and stand, covered, for 5 minutes.
Step 2 of 4
Meanwhile, heat oil in a large frying pan over medium heat. Add onion, chilli, ginger and garlic, then cook for 5 minutes, stirring, or until onion has softened.
Step 3 of 4
Combine soy, stock cube and 1 cup warm water in a medium bowl. Pour mixture into frying pan. Add pumpkin and simmer, covered, for 15 minutes or until pumpkin is tender.
Step 4 of 4
Divide rice among plates. Top with pumpkin mixture and serve scattered with coriander.
